Carbery’s Dubliner Irish Cheese is a cheese which is extremely popular this time of year with St. Patrick’s Day on everyone’s mind. I don’t know if that is why they were at the Washington D.C. International Wine & Food Festival, but we were happy to see them.
Dubliner Irish Cheese is a dryer, firm cheese with a very rich flavor, a tad salty, but the most interesting thing about it, is it’s texture. In some ways, it seems close to a Parmigiano cheese. The texture makes me think of it having a little ash in it, providing a soft grinding feel, but in a good way. This week, I learned what that feeling is – thanks to Whole Foods Market here is an explanation as it relates to Parmigiano-Reggaiano. I have to assume that the same is true for Dubliner Irish Cheese.
One of the magical things about biting into a piece of really well aged Parmigiano-Reggiano is the feel of those tiny sharp crystals crunching on your tongue. Many folks mistakenly think these are salt crystals, but they aren’t. During the aging process, the proteins in the cheese break down into smaller nutritional units (peptones, peptides, and free amino acids, in case you were wondering). Some of them-particularly tyrosine-are naturally converted into a crystalline structure. Their presence is one of the signs of a well-made cheese and long aging.
So there you have it, it may taste like ash to me, but it is good and worth a try. Its a far cry from our american cheddar cheese.
